I love guacamole and anytime I want to make a quick, delicious appetizer or snack, it’s definitely my go to. That’s why today, with Summer fast approaching, I wanted to share my recipe for roasted red pepper and feta guacamole. It’s a yummy, unexpected take on traditional gauc and just like the original, it’s easy to make. Just follow the steps below and start making roasted red pepper and feta guacamole like a pro.
Roasted Red Pepper Guacamole
1/2 Roasted Red Pepper
1/4 Chopped Red Onion
1 Cup Chopped Cherry Tomatos
2 Tsp Minced Garlic
1/4 Cup Feta Cheese
Salt to Taste
Pepper to Taste
- Start by pre-heating your oven to 450 degrees. Then, wash and halve the peppers, making sure to remove the seeds. Place the peppers on a non-stick pan, spritz with olive oil and roast for 25 minutes.
- While the peppers are roasting, use a fork to mash up the avocado in a medium bowl. Then, mix in the chopped cherry tomatoes, chopped onion, garlic, and lime juice.
- Once the peppers are done roasting and have cooled, chop them up and add them to the guacamole.
- Finish up by adding salt and pepper to taste and top it off with the feta cheese. Then, serve with chips and enjoy!
