Fig season is almost over, so I’m taking every opportunity to use them in as many dishes as I can. This one, whipped feta with figs and honey, is not only a delicious appetizer for parties or small get togethers, it’s also super easy to make!
Whipped Feta Dip with Figs & Honey:
Makes: 3/4 cup Time: About 25 minutes
8 oz Feta
2 tbsp Cream Cheese (I use low fat)
1 tbsp Honey
½ tsp Cinnamon
2-3 tbsp Honey
1 French Baguette
1. Set your oven to 400 degrees, then wash and half your figs. Place the figs on a baking sheet, sliced side up, and roast for 20-25 minutes, until browned. Once the figs are done, allow the figs to cool for about 5 minutes.
2. While the figs are roasting, add the feta, cream cheese, honey and cinnamon to a food processor and blend for 2-3 minutes, or until smooth. Once smooth, place in a bowl, cover and refrigerate while the figs continue to roast.
3. Next, slice your baguette into 1/4 inch slices. Place the slices on a baking sheet and toast in the oven for 8-10 minutes, or until lightly browned.
4. Once your bread is done, place your cooled figs on top of the feta dip and drizzle with the remaining 2-3 tablespoons of honey. Top your baguette slices with the feta dip, figs, and enjoy!
